The Trustee is a brand new bar and bistro in the Perth CBD, created by the clever folks behind The Beaufort Street Merchant. Siblings Scott and Angie Taylor invited us invited us to work with them to design a suite of menus to match the establishment itself.
And what a place it is. Added to the existing Art Deco bones of the heritage Trustees Building is a little bit of Edwardian English gentleman’s club (warm wooden furniture and studded leather banquettes), a little bit of Wall Street banking (a spectacular brass and glass wine vault), a little bit of library (rolling railed ladder and low-lit lamps) and a little bit of nautical nous (the glamourpus Genie, a winged angel of a ship’s figurehead watching over all who shall drink and dine there).Then there’s the food and wine.
With consultant chef Ian Curley at the helm, The Trustee serves seasonal fare with a nose-to-tail focus and no foams, gels or soils in sight. To accommodate the ever-changing menu of the downstairs bistro, we opted for engraved walnut boards, with the folded menu held in place by strapping. Like the venue itself, the menu is a carefully curated mix of old and new typefaces, of differing weights, with italicised and condensed fonts thrown in for good measure. The Trustee offer a staggering 500 wines, 50 by the glass. Leather-clad volumes hold the wine list, created by Emma Farrelly and Alex Turner. Thirty six carefully typeset pages in all.
Food and drinks menus for the bar upstairs are a simpler affair, printed on diecut kraftboard. We also worked with The Trustee on buiness cards, member cards, stationery, forms, maps, event templates and incidental signage. And our mouths watered at almost every step, due to daily descriptions of deliciousness we received as the menus took shape.
